Hearty Banana Bread

This is my new favorite banana bread--healthy and easy to throw together.

Hearty Banana Bread
adapted from Whole Foods for the Whole Family Cookbook
  • 1/2 C. applesauce
  • 1/2 C. honey
  • 2 eggs
  • 1 C. whole wheat flour
  • 1/2 C. cornmeal
  • 1/2 C. rolled oats (or I've also used quick oats)
  • 1/4 C. wheat germ
  • 1 t. baking soda
  • 1/4 t. salt
  • 2-3 ripe bananas (tip: don't premash, just break in half and toss in the blender!)
  • Chopped nuts, optional
Mix applesauce and honey. Add eggs one at a time, beating well. Combine dry ingredients. Add to honey mixture alternately with bananas, beating well after each addition. Add chopped nuts, if desired. Pour into greased loaf pan (single batch makes 1 loaf). Bake at 350 degrees for 50 min - 1 hour or until loaf tests done.
